Ingredients
- 20L water
- Mangrove Jack's M44 U.S west coast ale yeast
- NBS clarity
- 2000g Maris Otter (EBC 6)
- 3000g Vienna (EBC 9)
- 1000g Mornflake mighty oats (2 x 500g bag)
- 1200g Clementines
- 50g Citra pellet (14.2 AA)
- 50g Centennial pellet (10.8 AA)
- 50g Cascade pellet (6.1 AA)
Preparation
Make a yeast starter. Add the NBS clarity to this.
Peel the clementines. Discard the skin. Split into segments.
Brewing
Place all of the malt in a mash tun and strike with 14L water @ 75°C. Settles to ~62°C within a few minutes. Leave for 90 minutes.
Sparge. Add 6L water @ 100°C to rinse the grain. Extract ~15L @ ~55°C.
Bring to boil and keep at boil for 45 minues. No additions during boil.
Once cooled to ~80°C, add the hops and clementine segments. Leave to steep while cooling.
Once cooled to ~24°C, siphon into a fermenter and add the yeast.
Kegging
Siphon 12L into keg and force-carbonate to 32PSI. Leave at room temperature. Settles to ~20PSI within a few days.
